Cupcakes with a cocktail twist and other kitchen goodies!

How cocktail cupcakes happened

If you were to visit my house you would think I have a cocktail, glass of whiskey, a sip of wine, or a beer everyday of the week.  The buffet in my kitchen if filled with bottles of vodka, whiskey, rum, tequila, Bailey's, and wine.  My fridge is filled with various types of rich, dark beers, and some random IPAs.  And yet, I don't really like to drink.  Sure, there are a few types of drinks that I love (Bailey's and Clarion River Red Wine), but even those I have sparingly.  Years ago, my husband introduced me to Guinness.  The list of beer that I like is beyond small and I would never get through an entire bottle of Guinness, but there's something in the flavor I really like.  Slowly, I began incorporating Guinness into recipes like pot roast, corned beef, and bangers and mash.  Yes, we both have Irish heritages.  :)  Turns out, I love the flavor beer leaves behind in cooking.  This new found love for cooking with beer developed into a passion for baking with alcohol after stumbling upon a recipe for Irish Carbomb Cupcakes.  If you are unfamiliar with the drink of the same name, allow me to explain.  An Irish Carbomb consists of a glass of Guinness, with a shot of Irish whiskey dropped into it and then topped with Bailey's.  The cupcake is a chocolate Guinness cupcake, filled with chocolate whiskey ganache filling and topped with Bailey's buttercream frosting.  I played with the recipe a little bit and made it my own and YUM!  We couldn't get enough of this cupcake and I was making it often.  Eventually, I thought to myself, 'Why can't I make other alcohol inspired cupcakes?'  And so, I did.  My list of cocktail cupcakes is ever growing and I am constantly looking for what I can try next.  I guess this blog will follow that adventure.  And you can follow along on Facebook at Jenn's UnCommon Kitchen.
